Chiura is a common snack among farmers and workers in rural Nepal. The snack is made by pounding rice. The dish can be served with yogurt, curry, and or meat.
Beaten Rice holds special place in Newari food culture. It is not just eaten but also offered to gods. One can’t think of any Newari festivals and celebrations without Baji. Traditionally, it is prepared by steaming newly harvested rice grains, then roasting and beating using large wooden made tools like mortar and pestle until grains are flattened. Traditional way of making Baji is rarely practiced nowadays as now the process is largely mechanized for ease. In this video, you can see beautiful hard-working Ajis (grandmothers) from Tokha making Baji in traditional way.
